Ingredients

  • 2 boneless, skinless chicken breasts (1 lb)
  • 8 oz penne pasta
  • 1 cup fresh asparagus, chopped
  • 8 oz cremini mushrooms, sliced
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Cook the Pasta: Bring a large pot of salted water to boil. Add penne and cook until al dente, about 10-12 minutes. Drain and set aside.
  2. 2. Sauté the Chicken: Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then cook until golden brown, about 5-7 minutes per side. Remove from skillet and slice.
  3. 3. Add Garlic & Mushrooms: In the same skillet, add minced garlic and sliced mushrooms. Sauté until mushrooms are tender, about 3-4 minutes.
  4. 4. Combine Asparagus & Cream: Add chopped asparagus and heavy cream to the skillet. Simmer for 5 minutes until asparagus is slightly tender.
  5. 5. Mix in Cheese & Pasta: Stir in Parmesan cheese until melted. Gently fold in cooked penne pasta until well coated.
