  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 8 oz spaghetti
  • 1 can (14.5 oz) diced tomatoes
  • 2 tsp Italian seasoning
  • ½ cup grated Parmesan cheese

Instructions

  1. Place chicken breasts in the bottom of the crockpot and season with salt, pepper, and Italian seasoning.
  2. Add minced garlic and diced tomatoes on top of the chicken. Pour in chicken broth until just submerged.
  3. Place cream cheese on top without stirring.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  5. About 20 minutes before serving, cook spaghetti according to package instructions until al dente; drain.
  6. Shred the cooked chicken in the crockpot using two forks and fold in the cooked spaghetti until coated in sauce.
  7. Serve hot with grated Parmesan cheese on top.
