  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh broccoli florets
  • 1 cup orzo pasta
  • 3 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 4 oz cream cheese
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then sear for about 5 minutes on each side until golden brown. Remove from skillet and set aside.
  2. In the same skillet, add minced garlic and broccoli florets; sauté for about 2 minutes until fragrant and bright green.
  3. Stir in orzo pasta and chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for approximately 10 minutes until orzo is al dente.
  4. Add cream cheese and Parmesan cheese to the skillet, stirring until melted and creamy.
  5. Return cooked chicken to the skillet along with any juices. Gently fold everything together until heated through.
