  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh broccoli florets
  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream (or half-and-half)
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth
  • 2 tbsp lemon juice

Instructions

  1. Boil water in a large pot over high heat. Add salt generously before adding pasta. Cook until al dente according to package instructions.
  2. In a large skillet, heat olive oil over medium-high heat. Add diced chicken breasts seasoned with salt and pepper. Sauté until golden brown and cooked through, about 6-8 minutes.
  3. Stir in minced garlic and chopped broccoli florets. Stir-fry until broccoli is bright green and tender-crisp, about 3-4 minutes.
  4. Pour in heavy cream and chicken broth. Stir well while scraping up bits stuck to the pan.
  5. Gradually mix in Parmesan cheese until melted into the sauce. Squeeze lemon juice over everything.
  6. Add drained pasta to the skillet, mixing thoroughly to coat everything in the creamy sauce. Serve hot!
