  • 8 oz penne pasta
  • 6 oz Boursin cheese
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the penne pasta in salted boiling water until al dente; drain and set aside.
  3. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add spinach and cook until wilted (about 3-4 minutes).
  4. In a mixing bowl, blend Boursin cheese with heavy cream until smooth. Stir in sautéed garlic and spinach, along with half of the Parmesan cheese.
  5. Combine the cooked pasta with the cheese mixture until well-coated. Transfer to a greased baking dish.
  6. Top with remaining Parmesan and bake for 25-30 minutes or until golden brown and bubbling.
