- 1 cup Arborio rice
- 1 bunch fresh asparagus, chopped (about 1 cup)
- 4 cups low-sodium vegetable broth
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- ½ cup freshly grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- ½ cup dry white wine
- 2 tbsp butter
Instructions
- In a large skillet, heat olive oil over medium heat. Sauté onions and garlic until translucent.
- Add Arborio rice and toast for 1-2 minutes until slightly translucent.
- Pour in white wine and stir until mostly absorbed.
- Gradually add warm vegetable broth one ladle at a time, stirring frequently until absorbed.
- When half the broth is added, stir in asparagus and continue cooking until tender.
- Remove from heat and mix in Parmesan cheese and butter until melted.
