Description

Asparagus Risotto is a creamy, comforting dish that brings the vibrant flavors of fresh asparagus to your table. This easy-to-make risotto is perfect for weeknight dinners or special gatherings, combining the richness of Arborio rice and Parmesan cheese with tender asparagus.


Ingredients

  • 1 cup Arborio rice
  • 1 bunch fresh asparagus, chopped (about 1 cup)
  • 4 cups low-sodium vegetable broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • ½ cup dry white wine
  • 2 tbsp butter

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté onions and garlic until translucent.
  2. Add Arborio rice and toast for 1-2 minutes until slightly translucent.
  3. Pour in white wine and stir until mostly absorbed.
  4. Gradually add warm vegetable broth one ladle at a time, stirring frequently until absorbed.
  5. When half the broth is added, stir in asparagus and continue cooking until tender.
  6. Remove from heat and mix in Parmesan cheese and butter until melted.
