Instructions

  3. Pour in vegetable broth and bring to a simmer for 10 minutes.

  5. Blend until smooth using an immersion blender or counter blender (reserve some mushroom pieces for texture if desired).
  6. Serve hot, garnished with fresh thyme or croutons.
