  • 2 large sweet potatoes (about 2 lbs), peeled and thinly sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  2. In a skillet over medium heat, add olive oil. Sauté onions and garlic until translucent (about 3 minutes).
  3. Add ground turkey, breaking it apart as it cooks. Season with salt, pepper, paprika, and cumin; cook until browned (5-7 minutes).
  4. In a greased baking dish, layer half of the sweet potatoes followed by half of the turkey mixture. Repeat with remaining ingredients.
  5. Pour chicken broth over the layers to keep everything moist.
  6. Top with shredded cheddar cheese and bake uncovered for 30-40 minutes or until bubbly and golden brown.
