- 1 tsp salt
- ½ tsp pepper
- 1 cup shredded cheese (cheddar or mozzarella)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove seeds.
- In a skillet over medium heat, sauté chopped onion until translucent. Add minced garlic and cook for 1 more minute.
- Stir in ground turkey; cook until browned.
- Mix in cooked rice, diced tomatoes, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes.
- Generously stuff each bell pepper with the turkey mixture.
- Place stuffed peppers upright in a baking dish. Cover with foil and bake for 30 minutes.
- Remove foil, sprinkle cheese on top, then bake uncovered for another 10-15 minutes until bubbly.
