  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 3 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 2 cups low-sodium chicken broth
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, heat olive oil. Add diced onions and bell peppers; cook until softened (about 5 minutes).
  2. Add ground turkey to the pot; cook until browned (7-10 minutes).
  3. Stir in garlic, chili powder, cumin, salt, and pepper; cook until fragrant (1-2 minutes).
  4. Add pumpkin puree, diced tomatoes (with juice), black beans, kidney beans, and chicken broth; mix well.
