  • 4 cups low-sodium vegetable broth
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 cups fresh spinach
  • 4 cloves garlic, minced
  • 1 tbsp Italian seasoning
  • 1 medium yellow onion, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Set your Instant Pot to sauté mode. Heat olive oil and add chopped onion; sauté until translucent (about 3-4 minutes).
  2. Stir in minced garlic and Italian seasoning, cooking for another minute until fragrant.
  3. Add pumpkin puree and vegetable broth; combine well.
  4. Secure the lid, set to pressure cook on high for 10 minutes. Allow natural pressure release for 5 minutes before quick releasing.
  5. Carefully open the lid, stir in coconut milk until creamy.
  6. Fold in fresh spinach until wilted (about 2 minutes). Adjust seasoning as needed.
