  • 1 lb ground turkey
  • 4 cups low-sodium vegetable broth
  • 1 cup mini pasta shapes
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 2 cups fresh spinach or kale
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the vegetables and mincing the garlic.
  2. In a bowl, combine ground turkey with breadcrumbs (optional), egg (optional), garlic, oregano, thyme, salt, and pepper. Roll into small meatballs.
  3. Sauté onions in a skillet until translucent; then add them to the crockpot.
  4. Add vegetable broth, carrots, celery, mini pasta shapes, and meatballs to the crockpot. Stir gently to combine.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Stir in fresh spinach or kale about 15 minutes before serving.
