  • 4 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 1/4 cup caper berries
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1/4 cup fresh parsley, chopped (for garnish)
  • 2 tbsp butter (for sauce)

Instructions

  1. Mince garlic and squeeze lemon juice.
  2. In a skillet over medium-high heat, heat olive oil. Season chicken with salt and pepper; sear until golden brown on both sides.
  3. Layer seared chicken in crockpot; top with garlic and capers. Pour in broth and lemon juice.
  4. Sprinkle Italian seasoning on top; cover and cook on low for 6 hours or high for 3 hours.
  5. Once cooked, remove chicken and whisk butter into remaining juices to create the sauce.
  6. Serve chicken with sauce over pasta or rice, garnished with parsley.
