  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh carrots, diced
  • 1 cup frozen peas
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 package (17.3 oz) puff pastry sheets
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions

  1. Preheat your oven to 400°F (200°C). Chop chicken into bite-sized pieces and dice the onions and carrots.
  2. In a large skillet over medium heat, melt butter and sauté onions and carrots until soft (about 5 minutes). Add garlic and cook for an additional minute.
  3. Stir in chicken pieces along with salt, pepper, thyme, and rosemary. Pour in chicken broth and simmer until the chicken is cooked through (10-12 minutes).
  4. Mix in cream of chicken soup and frozen peas; let simmer for another 5 minutes until slightly thickened.
  5. Transfer the filling into a greased baking dish and cover with puff pastry, sealing edges well.
  6. Bake for 25-30 minutes or until the pastry is golden brown.
