  • 4 boneless, skinless chicken breasts (about 1 pound)
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 6 cups low-sodium chicken broth
  • 1 cup orzo pasta (about 6 ounces)
  • 2 cups fresh spinach or kale
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until onions are translucent.
  2. Stir in minced garlic and oregano; cook for about 30 seconds until fragrant.
  3. Add chicken breasts and chicken broth to the pot; bring to a simmer and cook for about 15 minutes until chicken is cooked through.
  4. Remove chicken from the pot, shred it with two forks, then return it along with orzo pasta to the pot. Simmer for approximately 10 minutes until orzo is tender.
  5. Stir in spinach or kale until wilted; squeeze in lemon juice before serving.
