  • 2 cups fresh broccoli florets
  • 3 medium Yukon Gold potatoes, thinly sliced
  • 1.5 cups shredded cheese (cheddar and mozzarella blend)
  • 1 cup heavy cream (or milk for a lighter option)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until golden brown, about 5-7 minutes.
  3. Add broccoli, garlic powder, salt, and pepper; sauté for an additional 3-4 minutes until broccoli is bright green but still crisp.
  4. Layer sliced potatoes evenly in the bottom of the prepared baking dish.
  5. Combine heavy cream with half of the shredded cheese; pour over the potatoes.
  6. Spread cooked chicken and broccoli mixture on top, then sprinkle with remaining cheese.
  7. Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 15-20 minutes until bubbly and golden.
