  • 2 medium sweet potatoes, diced

  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 tsp curry powder
  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale
  • Juice of 1 lime
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent (about 5 minutes). Add minced garlic and ginger; cook for another minute.
  2. Stir in brown lentils and curry powder; toast for about 2 minutes until fragrant.
  3. Add diced sweet potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 25–30 minutes until lentils and sweet potatoes are tender.
  4. Stir in coconut milk and simmer for an additional 10 minutes for creaminess.
  5. Fold in fresh spinach or kale just before serving until wilted. Finish with lime juice for added zest.
