  • 1 lb Italian sausage (sweet or spicy)
  • 2 cups butternut squash, cubed
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 5 fresh sage leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss cubed butternut squash in olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
  2. Meanwhile, cook pasta in boiling salted water until al dente; drain.
  3. In a large skillet, heat olive oil over medium heat. Add Italian sausage, cooking until browned; then stir in minced garlic.
  4. Add spinach and sage to the sausage mixture; cook until spinach wilts (about 2-3 minutes).
  5. Combine drained pasta, roasted squash, and sausage mixture in a bowl. Top with grated Parmesan before serving.
