- 1/4 cup fresh parsley, chopped
- 1/4 cup low-sodium soy sauce
- 2 tbsp freshly squeezed lemon juice
- 2 tsp smoked paprika
- 12 oz linguine pasta
- Salt and pepper to taste
Instructions
- 1. Season chicken breasts with salt and pepper. In a medium skillet over medium heat, melt the butter and sear the chicken for about 6 minutes per side until golden brown and cooked through (internal temperature should reach 165°F). Remove from skillet and let rest.
- 2. In the same skillet, sauté the minced garlic until fragrant (about 1 minute). Add soy sauce and lemon juice; simmer for 3 minutes while scraping up bits from the pan.
- 3. Cook linguine according to package instructions until al dente; reserve some pasta water before draining.
- 4. Slice rested chicken and return it to the skillet along with drained linguine. Stir in reserved pasta water gradually until desired creaminess is achieved.
- 5. Garnish with chopped parsley before serving.
