  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup unsalted butter (1 stick)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp freshly squeezed lemon juice
  • 2 tsp smoked paprika
  • 12 oz linguine pasta
  • Salt and pepper to taste

Instructions

  1. 1. Season chicken breasts with salt and pepper. In a medium skillet over medium heat, melt the butter and sear the chicken for about 6 minutes per side until golden brown and cooked through (internal temperature should reach 165°F). Remove from skillet and let rest.
  2. 2. In the same skillet, sauté the minced garlic until fragrant (about 1 minute). Add soy sauce and lemon juice; simmer for 3 minutes while scraping up bits from the pan.
  3. 3. Cook linguine according to package instructions until al dente; reserve some pasta water before draining.
  4. 4. Slice rested chicken and return it to the skillet along with drained linguine. Stir in reserved pasta water gradually until desired creaminess is achieved.
  5. 5. Garnish with chopped parsley before serving.
