  • 4 bone-in chicken thighs
  • 1 cup red wine (Burgundy or Pinot Noir)
  • 8 oz cremini mushrooms, sliced
  • 4 oz bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 sprigs thyme
  • 2 bay leaves
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cups low-sodium chicken stock

Instructions

  1. Chop vegetables and measure out wine.
  2. Sear bacon in a large Dutch oven until crispy; remove and set aside.
  3. Brown chicken thighs skin-side down until golden; remove and set aside.
  4. Sauté onions, garlic, mushrooms, carrots, and celery in the rendered fat until softened (about 5 minutes).
  5. Deglaze the pot with red wine; simmer for 2-3 minutes.
  6. Add chicken stock, thyme, bay leaves, cooked bacon, and browned chicken back to the pot.
  7. Cover partially and simmer on low heat for 30-40 minutes until chicken is tender.
