- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 4 cups low-sodium vegetable broth
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes).
- Add diced carrots and celery; cook for another 5 minutes until slightly softened.
- Stir in minced garlic along with cumin, thyme, and bay leaf; sauté for about 1 minute until fragrant.
- Add rinsed lentils and diced tomatoes (with juice), then pour in vegetable broth; stir well.
- Bring to a boil, then reduce heat and cover. Simmer for 30-35 minutes or until lentils are tender.
- Taste and adjust seasoning with salt and pepper if needed. Remove bay leaf before serving.
