  • 1 cup green or brown lentils, rinsed
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes).
  2. Add diced carrots and celery; cook for another 5 minutes until slightly softened.
  3. Stir in minced garlic along with cumin, thyme, and bay leaf; sauté for about 1 minute until fragrant.
  4. Add rinsed lentils and diced tomatoes (with juice), then pour in vegetable broth; stir well.
  5. Bring to a boil, then reduce heat and cover. Simmer for 30-35 minutes or until lentils are tender.
  6. Taste and adjust seasoning with salt and pepper if needed. Remove bay leaf before serving.
