  • 3 cloves fresh garlic, minced
  • 1 medium yellow onion, diced

  • 2 celery stalks, diced
  • 2 tbsp turmeric powder
  • 6 cups low-sodium chicken broth
  • 1 cup full-fat coconut milk
  • Juice of 1 lemon
  • Salt and black pepper to taste

Instructions

  2. Heat olive oil in a large pot over medium heat. Add onions and sauté until translucent (about 5 minutes).

  5. Simmer for 20 minutes until the chicken is cooked through.
  6. Remove chicken from the pot; shred it using two forks and return it to the pot.
  7. Stir in coconut milk and fresh lemon juice before serving.
