  • 1 cup red lentils, rinsed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 4 cups low-sodium vegetable broth
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh cilantro (optional)

Instructions

  1. In a large pot over medium heat, add 2 tbsp olive oil and sauté the chopped onion for about 5 minutes until translucent.
  2. Add minced garlic and diced carrots along with cumin and coriander powders; cook for another 3-4 minutes until fragrant.
  3. Stir in the rinsed red lentils and pour in the vegetable broth. Bring to a gentle boil, then reduce heat and simmer partially covered for 20-25 minutes until the lentils are tender.
  4. For a creamy texture, blend part of the soup using an immersion blender or in batches in a standard blender.
  5. Before serving, stir in salt, pepper, and freshly squeezed lemon juice to taste.
