- 1 packet ranch seasoning mix
- 1 large yellow onion, chopped
- 4 garlic cloves, minced
- 4 cups low-sodium beef broth
- 2 cups shredded sharp cheddar cheese
- 1 lb baby potatoes, halved
- 2 cups carrots, sliced
- 2 tbsp olive oil
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat. Sear the beef chuck roast until browned on all sides, then remove it from the pot.
- Add chopped onions and minced garlic to the pot. Sauté until fragrant and translucent (about 3-4 minutes).
- Return the beef to the pot along with potatoes, carrots, ranch seasoning mix, and beef broth. Stir well to combine.
