  • 4 cups low-sodium vegetable broth
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 1 cup small pasta (ditalini or elbow)
  • 2 tsp Italian seasoning
  • 2 cups fresh spinach or kale
  • Salt and pepper to taste

Instructions

  2. Stir in carrots and celery; cook for about five minutes until slightly softened.
  3. Add diced tomatoes and vegetable broth; bring to a gentle boil.
