  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh broccoli florets
  • 1 cup jasmine rice
  • 2 tbsp olive oil
  • 1/4 cup low-sodium soy sauce
  • 3 cloves garlic (minced)
  • 1 cup low-sodium chicken broth

Instructions

  1. Marinate chicken breasts in soy sauce and minced garlic for at least 30 minutes.
  2. Cook jasmine rice according to package instructions, using chicken broth instead of water for added flavor.
  3. Heat olive oil in a skillet over medium heat. Add marinated chicken and cook for 6–7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F). Remove from skillet and let rest.
  4. In the same skillet, add broccoli florets and sauté for about 3–4 minutes until bright green and tender-crisp.
  5. Dice the chicken and return it to the skillet along with cooked rice and remaining chicken broth. Stir to combine and let simmer on low heat for an additional 5 minutes.
