  • 1 lb boneless, skinless chicken thighs

  • 8 cups low-sodium chicken broth
  • 2 green onions, sliced

Instructions

  1. Rinse the jasmine rice under cold water until clear to remove excess starch.
  2. In a large pot, combine rinsed rice and chicken broth; bring to a gentle boil while stirring occasionally.
  3. Lower the heat and simmer for about one hour with the lid loosely covering the pot, stirring occasionally.
  4. After an hour, add chopped chicken thighs, ginger, and garlic; simmer for an additional 15 minutes until chicken is cooked through.
  5. Stir well before serving; adjust seasoning if necessary.
  6. Ladle into bowls and top with green onions and cilantro.
