- 8 oz spaghetti or fettuccine
- 1 cup bell peppers (mixed colors), sliced
- 1 cup zucchini, sliced
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 3 tbsp extra virgin olive oil
- 1/2 cup freshly grated Parmesan cheese
- Fresh basil leaves for garnish
- Salt to taste
Instructions
- Boil salted water in a large pot and cook the pasta according to package instructions until al dente.
- While the pasta cooks, heat olive oil in a skillet over medium heat. Sauté minced garlic for about 30 seconds until fragrant.
- Add sliced bell peppers and zucchini; sauté for 3-4 minutes until slightly softened.
- Incorporate cherry tomatoes into the skillet; cook for another 2-3 minutes until they begin to burst.
- Drain the pasta, reserving a cup of pasta water. Combine drained pasta with sautéed vegetables in the skillet.
- Gradually add reserved pasta water until reaching desired sauce consistency.
- Stir in freshly grated Parmesan cheese and torn basil leaves until well mixed. Serve immediately.
