Description

Chipotle Honey Salmon Tacos with Pineapple Salsa deliver an irresistible combination of sweet and spicy flavors, perfect for any taco night or summer gathering.


Ingredients

  • 1 lb fresh wild-caught salmon fillets
  • 1/4 cup chipotle sauce
  • 2 tbsp pure honey
  • 8 corn tortillas
  • 1 cup fresh pineapple, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. In a bowl, mix chipotle sauce and honey to create the marinade.
  2. Coat salmon fillets in the marinade and let sit for 30 minutes.
  3. Preheat grill or skillet over medium-high heat. Cook salmon for 4-5 minutes per side until flaky.
  4. While salmon cooks, combine pineapple, red onion, cilantro, and lime juice in a separate bowl for the salsa.
  5. Warm corn tortillas on another skillet until pliable.
  6. Flake cooked salmon onto tortillas, top with pineapple salsa, and enjoy!
