- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup Greek yogurt
- 4 large lettuce leaves (romaine or butter)
- 1 cup diced celery (about 2 stalks)
- 1 cup diced red grapes or apples
- ½ cup chopped walnuts or pecans (optional)
- Salt and pepper to taste
Instructions
- Cook chicken by grilling or boiling until fully cooked, about 15-20 minutes. Let cool.
- While cooling, chop celery and fruits. Combine in a bowl with Greek yogurt, adding salt and pepper.
- Shred cooled chicken using two forks and mix with the yogurt mixture until well combined.
- Lay out each lettuce leaf and fill generously with the chicken salad mixture. Fold gently and serve.
