Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup Greek yogurt
  • 4 large lettuce leaves (romaine or butter)
  • 1 cup diced celery (about 2 stalks)
  • 1 cup diced red grapes or apples
  • ½ cup chopped walnuts or pecans (optional)
  • Salt and pepper to taste

Instructions

  1. Cook chicken by grilling or boiling until fully cooked, about 15-20 minutes. Let cool.
  2. While cooling, chop celery and fruits. Combine in a bowl with Greek yogurt, adding salt and pepper.
  3. Shred cooled chicken using two forks and mix with the yogurt mixture until well combined.
  4. Lay out each lettuce leaf and fill generously with the chicken salad mixture. Fold gently and serve.
