  • 2 cups cooked rice (white or brown)
  • 1 can (15 oz) black beans, rinsed
  • 1 cup salsa (mild or spicy)
  • 2 tbsp taco seasoning
  • 2 cups shredded cheese (Mexican blend or cheddar)
  • 1 cup sour cream (or Greek yogurt)
  • Fresh cilantro (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Season chicken with salt and pepper; cook in a skillet over medium heat until golden brown, about 6-7 minutes per side. Ensure it reaches an internal temperature of 165°F (75°C).
  3. Shred the cooked chicken and mix it with black beans, cooked rice, salsa, and taco seasoning.
  4. Layer half of the mixture in the baking dish; top with half of the shredded cheese. Add the remaining mixture and finish with more cheese.
  5. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 10-15 minutes until bubbly and golden.
