- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup diced bell peppers (mixed colors)
- 1/2 cup fresh spinach (or frozen, well-drained)
- Salt and pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat the oven to 375°F (190°C) and grease a muffin tin with cooking spray.
- In a mixing bowl, whisk the eggs until frothy. Stir in cottage cheese, shredded cheese, bell peppers, spinach, salt, and pepper until well combined.
- Pour the mixture into the greased muffin cups, filling each about three-quarters full.
- Bake for 18-20 minutes until edges are golden brown and a toothpick inserted comes out clean.
- Allow to cool slightly before removing from the tin.
