Description

Cottage Cheese Egg Bites are a quick and nutritious breakfast option combining fluffy eggs and creamy cottage cheese, perfect for busy mornings or savory snacks.


Ingredients

  • 6 large eggs
  • 1 cup cottage cheese (low-fat or regular)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup diced bell peppers (mixed colors)
  • 1/2 cup fresh spinach (or frozen, well-drained)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin with cooking spray.
  2. In a mixing bowl, whisk the eggs until frothy. Stir in cottage cheese, shredded cheese, bell peppers, spinach, salt, and pepper until well combined.
  3. Pour the mixture into the greased muffin cups, filling each about three-quarters full.
  4. Bake for 18-20 minutes until edges are golden brown and a toothpick inserted comes out clean.
  5. Allow to cool slightly before removing from the tin.
